Nearly extinct sake rice makes a comeback.
Lately, many small breweries have started to revive heirloom rice strains local to their regions, imparting a sense of place and regionality to their sake. Fukucho’s Toji and President Miho Imada is a perfect example of such experimentation. Forgotten Fortune Junmai is a bottle showcasing the near-extinct Hattanso, an indigenous rice strain abandoned and forgotten in her hometown of Hiroshima. This bottle also speaks to Miho’s own conviction, determination and years of hard work that brought Hattanso back to its former glory as a regionally beloved sakamai – and landed her on BBC’s list of 100 Most Inspiring and Influential Women in 2020.
